What about black garlic?
I buy mine in bulk, grind and store in refrigerator in olive oil. Same with turmeric. Is that good or bad?

Would it be as healthy if you dice it finely and then just addnit towards the end of the cooking so the garlic wont get cooked as much? Lol. Or would that ruin the dish?
For my sauce, i SLICE , razor thin, two heads. Of garlic. Let it sit while i set and preheat on low, my olive oil.
I add the garlic and let it saute in a cup of olive oil. Till the middle piece falls out. Then add my tomatoes.
I bring it to a hard simmer snd let it go an hour with a screen instead of a lid on top.
Learned from a newly arrived italian family that invited me to dit on a stool in the koms kitchen to teach her english kitchen terms when i was 8.
I then did the same for a few other immigrant families and got to watch them cook and EAT..
so I eat like them, not like an american. I went to cooking school after hs. To learn the ways to oreserve nitrients in cooking.
We over cook way too much, cook too high heat.
You want to cook pork and chicken to at least med well. But much else , we cook all the nutrition out.
Veggies should be crunchy to aldente, pasta rice and potatoes too. Not mushy and glutonous. ( rice needs only 1 c water to 1 c rice. American instructions put 2 c water. It destroyed the structure if rice and makes it unhealthy, and yes white rice IS healthier than brown. Brown should be used 1 part brown to 4 parts white. Just as wild rice is mixed in premixed rice . )
