The Paleo diet is total shit. It's presupposed on false premise and isn't actually any healthier than just eating a balanced diet. There are many success stories from people that use it, but most of the successes can be summed up by just watching what you eat more carefully. The only benefit of the diet is that it encourages people to be more careful about what they eat.
You can use Veganaise instead of mayonnaise or use Just Mayo. They are plant based and taste better than real mayonnaise. You can use mashed up chick peas instead of the tuna, add some chopped celery, onion, and pickle, and have a mock tuna salad.
As a post-menoupausal woman, I hope I live long enough to see Ana turn 60. She will have insomnia, cortisol surges and blood sugar surges, leading to fat no matter what she does. She thinks she knows all the answers. Just wait until Mother Nature turns against her. It is a humbling experience.

I believe that you can get up to about 250lbs as an adult and still be quite healthy. Past that you'd need a seriously controlled diet and proper exercise (like what sumo wrestlers do).
Thing is a lot of people have heart issues that just never come up because they aren't overweight or running marathons. So this becomes an issue for some select people.
However for the most part weight is not a health issue it just indicates bad diet generally. If you're fat chances are you have a terrible diet and are not active.
Truth be told though its a lot more unhealthy to be thin but super inactive.
